Greetings,

I've checked on google, and can't find it :(.

What is the running coolant temp supposed to be for a WRX 05.
What temps are to low/to high/just right?

Just right should be between 185-197. At least that is how I have always seen my coolant temps around.

Mines in the middle, but the cobb ap says its around 200-210 after longer drives. Just want to make sure its safe :)

Yeah, that's not too bad for a turbo car. Make sure your coolant level is good and that there are no leaks or air pockets and you should be okay.

What temperature should I start to worry?

And if it does get worse, besides changing the coolant , would I want to change the thermostat?

Since I have owned my 2.5RS (about 2 weeks), the gauge has always been slightly above the 1/3 mark.

Those are normal temps. Fans probably don't come on until 210-220. Most modern cars all do. You can sell that AP and go Opensource and you can program the fans to come on earlier. Or you can upgrade your radiator to a aluminum for better cooling abilities. But the bottom line is your temps are normal.
